This isn’t grocery store olive oil.
Most bottles are filtered, blended, heat-treated, or old. Ours isn’t.
We press early-harvest olives using traditional stone mills, within hours of picking. First cold press. No heat, no chemicals, no second runs. Just one press — that’s where the best oil comes from.
It’s unfiltered — cloudy and textured, with olive particles that naturally settle at the bottom. That sediment? It’s proof we didn’t strip the oil to make it look “pretty.”
The green hue comes from chlorophyll, a sign of early harvest and minimal processing. Over time, it’ll turn golden. That’s natural. Real olive oil changes.
That peppery bite at the back of your throat? That’s polyphenols — antioxidants that show your oil is the real deal. If it doesn’t kick, it’s probably not extra virgin.
And the fridge test? Real olive oil solidifies when cold. Ours does. Most don’t. That’s how you know it’s not cut, blended, or messed with.
